Watermelon + Feta Salad
This salad is my favorite side salad, it’s the perfect starter to any meal. You’ll be surprised how well these flavors go together, and you’ll love how refreshing and cool this salad is on a hot summer day. Just a few simple, fresh ingredients that can be whipped up in no time at all.
Good olive oil (Bariani is my favorite)
Coarse salt + ground pepper
Ice cold seedless watermelon, rind removed, and cut in 1-inch cubes (You can also use a melon baller, for extra flair)
Good feta cheese (Cubed or Crumbled)
1/4 medium red onion, thinly sliced (optional)
Place the watermelon, and feta in a large bowl. Drizzle lightly with olive oil and toss well. Season with salt and pepper and serve immediately.
Options: Serve over a bed of baby arugula, sprinkled with Lemon. Garnish with Basil or Mint.
